Slow roasted lamb with beer up a hill in Mallorca

Misreading the recipe and putting triple the amount of chili into a Chili con Carne

What's the worst meal you've ever had?

A stuffed squid in a bright yellow sauce in Mallorca

What's the most outlandish thing you've ever eaten?

Wichity grub in Australia ( not that I doubt you , but really??)

Who's your food hero/food villain?

Hero – organic farmers/independent restauranteurs
Villain – pretentious cooks and restaurant chains

Gordon or Marco?

Gordon because his food his amazing but I hate the histronics and ego

Gin or vodka?

Vodka

Muesli or fry-up?

Providores fry up – but their Thai Basil and lime waffles with tomato, sweetcorn, rocket and avocado salad and tomato jalapeno chutney  take some beating

Wine or beer?

Wine

Fast food or fresh food?

Fresh food to be good but I love a burger and fries

What do you consider the best of the best of British?

The passion of the English foodie and the amazing varieties of different fruits and veg.

What's the best/worst thing about the British food scene?

Our openness in trying new things and the huge choice of restaurants we have around the country
Our belief that money always equals quality ie in overpriced restaurants – we really sell ourselves short in the quality department and also the belief that working in a restaurant is not a career just something to do until something better comes along.

What do you think will be the next big thing?

That food stops being something that needs to be fashionable and starts to be something that we care about all the time.

What would you do if you could choose any other career?

I can’t think of anything but I wish I could be a bit more focused!
